Apple Mac Cookies

2 cups macadamia nuts

1 large egg

4 Tbsp. unsalted butter

¼ - 1/3 c honey, to taste

½ tsp. sea salt

¼ tsp allspice

½ tsp.. cinnamon

3 Tbsp. coconut flour

1 small apple, diced


·      Process nuts to a coarse butter, scraping down bowl once or twice. 

·      Add egg and process to combine; add butter and process to combine; add honey and process to combine

·      Add salt and spices and process, then add coconut flour and process. 

·      Remove to a bowl and stir in apple pieces

·      Chill dough thoroughly

·      Heat oven to 325º and line two cookie sheets with parchment paper

·      Drop tablespoon-sized balls onto prepared sheets, spacing 12-15 cookies per sheet

·      Bake 12 minutes for barely-baked cookies or 15 for nicely-baked-but-still-chewy

·      Cool and enjoy!


Yield: 3-4 dozen cookies (about three cookie sheets full)
